Petra's Recipe of the Week


ROASTED CAULIFLOWER AND BRUSSELS SPROUTS


Fall is here, so it is time to enjoy robust harvest vegetables! Not only does this recipe look beautiful, but it is actually delicious with a rich caramelized and roasted flavor.

Ingredients:

1 medium head of cauliflower, cut into ½-1” florets
2 Cups Brussels Sprouts, halved lengthwise
2 Tbsp coconut or olive oil
3 large cloves garlic, minced or finely chopped
½ - 1 tsp dried rosemary
½ -1 tsp celtic sea salt


-Steam cauliflower and Brussels Sprouts for 4-6 minutes. (Don’t overcook.)

-Put cauliflower and Brussels Sprouts in a large bowl, let cool.

-Drizzle oil on top, and then add garlic and seasoning.

-Spread vegetables in single layer on a greased roasting pan.

-Roast at 450° until vegetables are crisp-tender and begin to brown at the edges (15 -20min.)
-Serve hot or at room temperature!

WHY YOGA?

WHY YOGA?

When asked the question “why yoga?” a million answers come rushing to mind. Answers such as: It feels fantastic, I sleep better, Yoga helps me gain flexibility, strength and peace of mind, etc. But the best answer to this question may be the easiest answer of all. Why Not Yoga!!!!!

Why not participate in an activity that both eases tension in the body as well as the mind? Why not take the time to tap into your mind and your soul in an effort to better yourself as a person? Why not partake in an activity that keeps you healthy and vibrant? I could seriously go on and on.

Yoga has the ability to heal both body and spirit. When yoga is part of your daily routine, the quality of your life is enhanced. Yoga will soothe aches and pains, ease tension and quiet the mind. In a world full of tension and stressors, yoga is our tool to inner peace and comfort. So if you are considering introducing yoga into your life, I say GO FOR IT!!!! WHY NOT!!!!
